The Treby Arms

Here comes the sun and Michelin star restaurant and country pub The Treby Arms is launching a delicious seasonal menu alongside a new-look website celebrating everything the summer has to offer.

Head Chef Luke Fearon joined The Treby in Sparkwell, South Devon, last June and took over the kitchens in March this year. He’s a passionate advocate for local produce and even has a mission statement on all his menus promising to work closely with the habitat, the seasons and the suppliers. “We are just the middlemen for our world class ingredients,” it says.

Luke says the transition from spring into summer brings a dramatic transformation from rain sodden fields and rich hearty dishes to sunnier days and plates of light elegant food. Expect to find light summer flavours like Cornish crab, lamb, the “must have” native Cornish lobster and the red mullet, which was recently tweeted on by The Michelin Guide saying, “There’s a lot of red mullet around at the moment and it was really good here @thetrebyarms by @chef_fearon #Devon”.

“Living so close to the warm waters of the south coast and building up good relationships with day boat fishermen has allowed us at The Treby Arms to source fantastic sweet and juicy first of the season lobster which come straight out of the pots and on to the plates that evening… or late lunch if we get a push on!”

With the new season comes a fresh look to The Treby Arms website. You can see all the Treby menus in full, including Á La Carte, the Taster Menu and a Set Lunch offering at £25 for three courses. Luke is also sharing online some of his favourite summer recipes including a refreshing Strawberry and Fizz Sorbet and a light Bergamot Panna Cotta.

And if you’ve wondered how you earn that elusive Michelin star, watch Luke’s video on how to plate like a professional.
